Oranges? What to do with.?


I have about a dozen fresh oranges I'd like to use up. Does anyone have a good recipe for them? I don't want to just make juice (I don't have a juicer) but I'd like to use them without just eating them plain! Thanks!!!

Green Salad with Walnuts and Oranges

8 c Romaine lettuce -- torn
4 c Chicory greens -- torn
4 Green onions -- thinly
Sliced
2 Oranges -- peeled and
Sliced
1/3 c Toasted walnuts -- chopped
Walnut Oil Dressing-----
2 tb White wine vinegar
1 ts Lemon juice
2 ts Dijon mustard
1/4 ts Salt
1/8 ts White pepper
3 tb Walnut oil
1/3 c Salad oil

Instructions:
1. In a large bowl gently mix greens, onions, and oranges.

2. Mix lightly with Walnut Oil Dressing. Sprinkle with nuts.

Walnut Oil Dressing: In a medium bowl mix vinegar, lemon juice, mustard,
salt, and pepper. Using a whisk or fork, gradually mix in oil until
dressing is well blended and slightly thickened.

Fresh Orange Cake

4 md Oranges
1/2 c Sugar
1/2 c Soft shortening
1 c Sugar
2 1/4 c Sifted cake flour
2 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt
2 lg Egg whites
Orange Cream Icing,
Recipe follows

Instructions:
Heat oven to 350'F. Grease and flour 2 8-inch round layer cake pans. Grate
the rind from two of the oranges, then peel these and one other orange,
removing all of the white next to the pulp. Discard the peel. Section these
oranges, discarding membranes and seeds. Cut the sections into very small
pieces. Squeeze the remaining orange and add the juice to the cut-up fruit
sections. Measure out 1 1/4 cups of this mixture and add 1/2 cup sugar to
it. Stir until the sugar dissolves. Take out 1/4 cup and reserve for the
icing. Cream sugar well, add 1 cup sugar gradually and cream well after
each addition. Sift flour, baking powder, soda and salt together and add to
creamed mixture alternately with the orange-sugar mixture. Stir in one
tablespoon of the grated orange rind. Beat egg whites until stiff but not
dry and fold in. Turn into prepared pans and bake about 25 minutes or until
tops spring back when touched lightly in the center. Turn out on racks and
cool. Fill and ice with Orange Cream Icing and sprinkle top with remaining
grated orange rind.

what are some great "smoothie" or "juice" recipes to aide in the rejuvenation of your GI tract/reduce stress?


i think i'm going to use a food processor instead of a juicer because i want as much of 'the good stuff' as i can get. i have stressed myself into some kind of GI problem and want to start fixing it. i don't really have time to make and eat fresh veg, so i just want to puree them up with some fruit and drink it throughout the day. any recipes and advice would be awesome. thanks!

    I compost what we don’t eat, but I am guilty of buying more than I have time to dook. I remember the wonderful recipes my mother used to cook, but I run out of time or up against my husband’s refusal to eat certain kinds of food — okra, potatoes. I think I will fix them just for myself but I don’t. Planning what I will cook which day is nearly impossible. As sure as I make a plan something will come up to keep me from going forward with it — too little time, going out for some reason or another. I plead guilty, guilty, guilty, but at least I compost the extras. And I do grow my own herbs, salad greens, and some other greens. I don’t feel so bad if I compost what I don’t eat in my little garden. Not sure why. I do share with the neighbors, but they don’t know what to do with kale and/or arugula. One even says she only uses one lettuce leaf per day for her husband’s sandwiches. We don’t waste much meat or fish, though. I keep it frozen and keep out just what we need that night. I have been tempted to buy a vita mix, but kale and apples blended up together don’t really appeal to me much. Maybe I would like it if I tried it.

    hello thx for the response. i mix several times a day, and about an hour afterward i get hungry again. i started adding protein, but i still get hungry. any ideas why??
