I would like to make Tomato Juice...?
but several of the recipes require you to cook the veggies down, the run through a food mill, or sieve... i dont have either of those. I do, however, have a very nice big Juicer. Can I cook the veggies down and then throw them in the juicer??? Also, can I freeze left over juice instead of canning it?

Nothing tastes better then homemade tomato juice. It is a wonderful alternative to store bought juice, and you'll be surprised at how great it tastes!
Preparing Your Tomatoes for Juicing
Blanching Before Peeling : One to two at a time, put the tomatoes into a 3-quart saucepan of boiling water. Bring quickly back to a boil, and boil only for 10 seconds. Remove at once with a slotted spoon and put into a bowl of cold water.
Peeling : Cut out the stem with a small knife, cut a 1/2-inch cross in the skin at the bottom end, and strip off the peel. (You may want to save the peels for a tomato sauce, since the peel intensifies the red color as well as improving a little flavor.)
Seeding and Juicing : You may cut a peeled tomato in half crosswise and, holding one half, cut side down, gently squeeze out the juice and seeds, poking out the remaining seeds from the interstices with your little finger.
Saucing the Remains : Save all the remains for sauce, except the stems. Freeze the remains if you are not making a sauce right away.

Tips for Freezing Vegetables
Freezing vegetables is one of the best ways to preserve them. While canning may be more economical, freezing preserves more of the vegetable’s nutrient value. Vegetables should be blanched in water or steamed before freezing.
Tips for Vegetable Freezing Success:
* Use young, tender vegetables at their peak.
* Freeze as soon after harvesting as possible.
* Start counting your blanching time as soon as the vegetable is placed in hot water or a steamer.
* Blanch one pound or less of vegetables per gallon of boiling water; place your vegetables in a wire basket or mesh bag and immerse in boiling water.
* To steam blanch vegetables, place one layer only in the bottom of your wire basket over several inches of boiling water in your steamer. Cover. Steam for 1 and ½ times longer than the amount of time you would use for blanching.
* After blanching, cool vegetables immediately in ice water for the same amount of time as you used for blanching. This applies to every vegetable that calls for blanching – always cool in ice water afterwards.
* Freeze at the lowest possible setting on the freezer to retain more crispness.
* Use the best quality freezer bags or containers to prevent freezer burn.
* Squeeze as much air as possible from your bags before freezing.
* You can conveniently stack bags in a box before putting into the freezer.
* Label your bags with the vegetable name and the date.
* Use your frozen vegetables within 8-12 months for best flavor and nutrients.

I am so glad i made the upgrade from my old, hand me down, plastic juicer. A friend of mine has a juicer just like this, so i got to try it before i ever thought of upgrading. i loved his juicer, and decided to make the sacrifice, so i went to my wonderful amazon where i can find so much and where alaska is not considered a foreign country and i can get things delivered to me. i love my new juicer, it is like a 'god' in my kitchen. if you can afford it, and you are a regular juicer like me, i reccommend it strongly. i however, would not juice a whole apple, even though it will fit, because i believe apple seeds to not be healthy for human consumption (i read it somewhere and the info stuck with me). i love juicing... i love this juicer... and juicing makes me love life.

I LOVE this juicer! It is very easy to clean and the fact that the pulp spits out into a container is a big plus. This allows you to make lots of juice. I previously had an ACME juicer and then I purchased a Green Star juicer. I absolutely hated the Green Star and it has sat in my pantry unused for the reasons so clearly stated by a previous reviewer. I always returned to the ACME juicer, which I purchased in 1982 and still works like a charm. The only reason I replaced it was because I wanted the convenience of continuous juicing without having to stop to clean the basket. I would highly recommend the Breville juicer to anyone who is serious about juicing.
